Arachu Vitta Sambhar


Mixed lentils with drumsticks, coconut, tamarind and
spices

INGREDIENTS

METHOD

Ingredients:
2 tomatoes - chopped
1 cup yellow lentil (tur dal)
cup of drumsticks
1 onion - chopped
cup tamarind extract
A pinch of turmeric powder
salt - to taste
Dry ingredients:
cup bengal gram (yellow chana
dal)
6 whole red chillies
3 tbsp coconut - desiccated
1 tsp coriander seeds
1 tsp fenugreek seeds (methi)
oil
Powder ingredients:
1 tsp sambhar powder
1 tsp red chilli powder
tsp turmeric powder
Seasoning ingredients:
1 tsp fenugreek (methi)
2 tsp urad dal
Few curry leaves

Method:
Boil the yellow dal in a pressure cooker, mash it and
keep aside. Heat 1 tsp of oil in a pan and saut all
the dry ingredients for 2-3 mins.
Then, grind them together with some water making a
paste. Keep aside. Cook the drumsticks with a pinch
of turmeric powder in some water. Remove from fire
when soft.
Heat 1 tsp of oil in a pan and saut the onions till
they turn golden brown. Add tomato, ground masala
and the powder ingredients with some water. Stir
well.
Add the drumsticks, thur dal and the tamarind
extract. Mix well. Add two cups of water and let it
cook for 15-20 min on medium heat.
In another pan heat 2 tbs oil and add all the
seasoning ingredients. Let it simmer till they begin to
crackle.
Then mix these seasoning ingredients in the
sambhar and serve hot.

Gulab Jamun
ndia's favourite sweet, made at home with khoya and
sooji

METHOD

100 gm firmly packed khoya
1 tbsp refined flour or soojee
1/4 tsp baking soda
2 cups sugar
2 cups water
2 tbsp milk - mixed with a litttle
water
4 green cardamoms - slightly
crushed
ghee

With the heel of your palm or the base of a flat metal
bowl, mash the khoya, so that no grains remain.
Mix in the flour and baking soda and knead into firm
dough. You can use a food processor too.
The dough should be firm but pliable and should not
feel dry. f it does feel dry, wet your hands and work
the dough again.
Shape the dough into marble-sized balls (jamuns)
that are smooth and creaseless. The shape can be
round or oblong.
Heat ghee in the kadahi till a piece of dough tossed
in comes up at once.
Lower heat and fry a cube of bread till light brown
(this lowers the temperature of the ghee).
Lift out bread and add as many jamuns as will fit in,
without one touching the other.
Keeping the heat low, fry these till a golden brown all
over.
Drain the jamuns out of the ghee, and fry the next
lot, increasing the heat for a few seconds and then
lowering it again before adding the jamuns.

Keep gulab jamuns aside till the syrup is ready.
Mix the sugar and water and place over low heat,
stirring till the sugar dissolves. Make sure it does
not boil.
ncrease the heat once the sugar dissolves, and
then bring mixture to a boil.
Add the milk and water mixture and continue boiling
over high flame, without stirring.
Skim off any scum that collects on the sides of the
pan.
Cook till syrup thickens a bit. A finger dipped in
slightly cold syrup should form a coating on it
for a few seconds.
Take syrup off stove and cool for a minimum of half
an hour. Strain through a fine nylon sieve
or muslin cloth.
Add cardamom and bring syrup to a boil again.
Add the fried gulab jamuns to it and put off the heat.
Let jamuns soak for at least half an hour
before serving.

Sambhar
Tangy arhar dal and tamarind, made at home in a
microwave

1 cup arhar dal-picked and washed
well 2 tsp salt 1 tbsp sugar 2-3 tbsp
sambhar masala 6-8 small whole
onions-peeled 2 tsp mustard seeds
10-15 curry leaves 2-3 whole red
chillies 1 tbsp oil 1 tsp tamarind
pulp coriander for garnish
Soak the arhar ki dal in 2 cups of boiling water for
1/2 an hour. Add salt and onions and cook covered
at H for 5 minutes. Stir and cook again at 70% for
10 minutes. Mash the dal to a pulp or blend in a
blender. Mix in the sugar and the sambhar masala.
n another dish, mix together the mustard seeds,
curry leaves, red chillies and the oil. Cook covered
at H for 3 minutes. Add the dal mixture to this along
with 2 cups of boiling water and cook covered at
70% stirring once. Mix in the tamarind and cook
covered at 30% for 5 minutes. Serve garnished with
coriander leaves, accompanied with idlis or plain
boiled rice.

3 medium potatoes-cut into 1/2"
cubes 1 chopped onion 4 cups of
water 2 tbsp soup powder 2 tbsp
chopped parsley salt to taste 2 tsp
freshly crushed pepper 4 cups
cream-style corn 2 cups soya milk
3 tbsp soya bean fine dices 2 tbsp
soyabean oil ( for frying)

Put the potatoes, onion, water, soup powder,
parsley, salt and pepper together in a medium
saucepan.
Bring this mixture to a boil, reduce heat and simmer
until potatoes are tender.
Remove pan from heat and stir in the corn.
Put two cups of the mixture into a blender or use a
hand held stick blender and briefly puree.
Return the pureed mixture to the pot.
Stir in the soya milk into the pot and heat through.
Garnish with fried soya bean dices and serve.

Baby Corn Soup
A baby corn soup with the goodness of cabbage,
capsicum and mushrooms.

METHOD

1 cup baby corn-slit into two,
lengthwise 4 cups water 1 tsp
ginger-finely chopped 1 tsp garlic-
finely chopped 1 tsp green chilies-
finely chopped 1 tbsp coriander
leaves-finely chopped 2 tbsp
cabbage-finely chopped 2 tbsp
capsicum-finely chopped 2 tbsp
mushrooms-finely chopped 1 tsp
pepper 1 tsp soya sauce 4 tbsp
cornflour mixed with 1 cup water 3
tbsp oil salt as required

n a pan, stir fry the ginger, garlic, coriander leaves
and green chilies for about 2 minutes. Add the corn
and all the vegetables (except cabbage), pepper,
and salt and stir-fry 2-3 times. Add the soya sauce,
water and salt. Let it boil, reduce the heat and add
the cornflour mixed with water and stir constantly till
it thickens slightly, then add the cabbage. Remove
from heat and serve immediately.
