My early childhood was spent moving from one town to another with my fathers travelling theatre company; comprising

of over 200 employees, they would perform wonderful musical plays which would continue throughout the night and end at dawn. Exhausted, The Company had food together, with my father presiding at the head of the table. Little me would wander through the community kitchen; fascinated by the food being prepared in massive cauldrons. I enjoyed watching the joy on the diners faces as they savoured tasty delights. I suppose, this was my inculcation into the fine art of cooking. Al salam alaikom. My ancestors were born into the royal kitchens of India. Traditional Indian cooking methods have been handed down through generations. I am presenting recipes that have been tasted and perfected over lifetimes. Over the years, I refined my musical talents along with my culinary interests and seriously attempted to learn the diversity in Indian food, which changes from region to region. India is the land of countless religions, cultures, languages, dialects and taste buds, and my attempt to give you a glimpse of a few regional dishes here at Ashas only scratches the surface of the vast potential of Indian cuisine. The menu is inspired by the offerings of great chefs that I have met over the years and I sincerely hope that you, your family and friends share in my family secrets and enjoy the recipes of my heart. Rahul Dev Burman was a prince of the royal family of Tripura in North East India and the emperor of Indian popular music. This style of fried prawn comes from his native region and he simply adored it.

My mother Mai, cooked great non-vegetarian cuisine for her family, but remained a pure vegetarian all her life. She simply adored this simple roasted aubergine dish.

Manohari Singh hailed from Nepal and was R D Burmans key musician He played the saxophone and flute in almost all of Rahuls songs. Sometimes, we persuaded him to make his Nepali style leg of lamb & this is his recipe.

My Mother came from the Khandesh province in India. They love their peanuts and use them quite liberally in their cooking. This is rural India cooking.

HOME STYLE SPINACH (PALAK) Dhs 60 Usually, Spinach in Indian cuisine is combined with Paneer (cottage cheese) and often has cream, ghee and butter, which makes it quite rich and heavy. However, this dish though is light, easy and brings out the true taste of spinach SALEEMS DAL MAKHANI Dhs 57 Classic black lentils cooked overnight with tomatoes, cream and clarified butter. As children we spent our holidays in Indore with my aunt JEEJI. She taught me this dal, which is a common preparation of Madhya Pradesh (Central India).

MURG MAKHANI (BUTTER CHICKEN) Dhs 85 Classic chicken tikka in a tomato and cream gravy. DHANIYA MURG Dhs 75 Our chefs delicacy. Chicken cooked in a coriander seed and cashew nut gravy. CHICKEN JHALFREZI Dhs 75 Chicken strips tossed with fresh vegetables in a chunky tomato and onion gravy. MURG BEGAM BAHAR Dhs 65 Boneless chicken flavoured with fenugreek, cooked in onion and cashewnut gravy. GOAN BROWN CASHEW CHICKEN CURRY Dhs 65 Chicken pieces on the bone cooked with whole red chillies and onions in a coconut milk and cashewnut gravy.
Goa, in western India, has abundant cashew and coconut and therefore we find liberal use of these two ingredients in Goan cooking. This particular curry has plenty of whole cashews and coconut milk. Best to be had with white rice.

My mother, Mai, was a pure vegetarian and refused to taste non-vegetarian food that she cooked for my father and her family. So, I became her chief taster and young apprentice.

NALLY GOSHT Dhs 75 Nally Lamb shanks flavoured with maze, cooked with ginger and garlic in brown onion & bone marrow sauce.

Sightseeing in the Sultanate of Oman, I stopped for lunch at a small dhaba and had the most wonderful karahi gosht. This is my presentation of that hot afternoon.

Chandni Chowk area in old Delhi has an array of old and traditional restaurants serving some of the best North Indian cusine. The food reflects the attitude of the Punjabi people, who are extremely hospitable, affectionate and generous.

HOLKAR PALACE WHITE CHICKEN CURRY Dhs 65 Chicken pieces on the bone cooked with almonds, Chironji and chilli seeds in an onion and yoghurt gravy.
Maharaja Tukoji Rao Holkar of Indore and my father were close friends. My parents would be the guests of the Maharaja, whenever they visited Indore. The Maharaja and my father relished this chicken dish and my mother convinced the royal chef to part with his recipe

MONAJIS SAME OLD CHICKEN CURRY AND RICE PULAO Dhs 75 Boneless chicken pieces cooked in onion, tomatoes, almonds, coriander and green chillies.(Served with chicken pulao cooked in its own stock)
Composer O P Nayyars wife Mona, taught me this wonderfully simple, yet tasty chicken curry and rice pulao. The curry is light and the rice pulao delicate. Ideally, these should be eaten together.
