I never thought I would say this but Brussels sprouts have become one of my favorite vegetables

They resemble a mini version of cabbage; which is not surprising now that Ive learned they are related. They are also related to broccoli and cauliflower.

Brussels sprouts are a very good source of many essential vitamins such as Vitamins A, C, K, fiber, and folate.
All in all, they are a very nutritious vegetable and the best part is they are believed to protect from cardiovascular diseases, colon and prostate cancers.

Crunchy Sweet Brussels Sprouts Salad


Ingredients 1 pound Brussels sprouts 1/2 teaspoon ground nutmeg Kosher salt and freshly ground black pepper 1/2 cup dried cranberries Candied Walnuts: 1 C Walnuts, Roughly Chopped 1/4 C Brown Sugar Pinch of Salt Dressing: 3/4 cup olive oil (good quality) 1/4 cup apple cider vinegar 2 tablespoons water 2 tablespoons honey 1 1/2 teaspoons salt 1/4 teaspoon pepper To Candy the Walnuts: Preheat the oven to 350 degrees and spread the walnuts on a baking sheet and bake for 5 minutes until just toasted. Remove from the oven and let it cool. Meanwhile, pour the sugar into a medium saucepan and cook on medium heat, stirring with a wooden spoon while the sugar melts. Keep stirring until the color turns a medium amber color. Once that color is reached, add in the walnuts to the pan and quickly stir to coat. As soon as they are coated, spread them onto a baking sheet and sprinkle with the salt, cinnamon, and cayenne. Let them cool completely before adding them to the salad.

Apple cider vinegar dressing: Combine vinegar, water, honey, salt and pepper in a blender. Drizzle olive oil into blender until combined
