Mini meat balls

Ingredients
• 175 gram lean minced
beef

• ¼ onion, grated

• ½ garlic clove
• 1 tsp chopped fresh
oregano

• 1 tbsp olive oil

• 225 g tomatoes,
peeled and chopped
• Salt

• ground black pepper


Directions
• Combine the beef onion, garlic, half
the oregano, andthe parmesan in a
bowl, season well and mix
throughly,
• roll the mixture into about 20 bite
size ball
• Heat the oilin a large, non stick,
fraying pan. Add the ,eatballs and
cook, stirring the gently to brown
them all over. Work in batches if
necessary, removing browned
meatballs as they are ready. When
all are browned, return all the
meatballs to the pan.
• Add the tomatoes and remaining
thyme , season and simmer gently for
about 20 minutes . until the the
meatballs are cooked and tender.
Serve hot or warm.
