Milk products
• By volume of product dried, the dairy industry is by far largest user of spray
dryers of food processing
• Milk is always concentrater in falling-film evaporation to a solid content of
45-55 % before spray drying because the cost of removing wáter in the
evaporator is about 1/10 the cost of removing it in a spray dryer
• Spray dried milk products are re-dissolved or dry mixed when utilized

granulated
