Introduction
We have decided to start a Cookie Company in our on-campus apartment We have decided to provide students with freshly baked cookies The cookies will vary according to ingredients and the demand of the students We have decided to serve the buyers , the cookies that will be hot out of the oven

The Production Process


Mixing all the ingredients in a food processor

Spoon out the cookie dough onto a tray

Put the cookies into the oven


Baking Of Cookies

Take the tray of cookies out of the oven and let the cookies cool

1. How long will it take you to fill a rush order?

2.How many orders can you fill in a night, assuming you are open four hours each night
No. of mins business is open = 4 * 60 = 240 mins The bottleneck in this process is the oven and it takes 9 mins in that step. So, the number of orders that can be finished is primarily dependent on the oven throughput. (240/9) 1dozen = 9 minutes (oven) No. of minutes business is open =240 mins Dozens of cookies can be baked = 240/9

= 26 dozens

3.The time taken?

5. How many food processors and baking trays will you need?
We will need 3 baking trays because in a bowl we can make only 3 dozens of cookies For the convienience during rush hours we will need an extra tray because all the three trays will be filled with cookies We will need only one food processor

6. Are there any changes you can make in your production plans ?

The bottleneck is the oven, which means there is no point in looking at expanding the capacity of any other resource unless the operation's baking capacity is expanded first. For this what we need to do is increase the number of oven

If in case the roommate has to do everything by himself, the task is already divided between the roomies The first roommate has been allotted the work of tray washing and mixing of the dough and the other roommate can do the the rest of it However in the case where the one roomy is not there, the second roomy can do his task as he has been assigned For back up there would be preserved mixed dough in place so that the mixing can be take care of and the washing of trays can be done by dishwashers if available or else there can be utilizing of couple of extra trays that can be used for such crisis One can always be ready as the absenteeism of one employee would be known to the other roomy before hand so the steps can be taken to prevent any mishaps The 4 minute buffer can be used in such cases

Deliver timing should be within 30 minutes As the order hits the electronic device it shall give a notification to the roomy that there is a order queued up Orders will be taken up as per the order received There would be special priority given to the bulk orders as the profit on bulk orders would be comparatively higher and this would also increase the possibilities of building repo with the client/customer for future bulk orders

Deliver timing should be within 30 minutes As the order hits the electronic device it shall give a notification to the roomy that there is a order queued up Orders will be taken up as per the order received There would be special priority given to the bulk orders as the profit on bulk orders would be comparatively higher and this would also increase the possibilities of building repo with the client/customer for future bulk orders There should be a safety margin of 10 to 12 % on the delivery commitment given to the customer. The delivery commitment would be 30 minutes with the cookies being ready in 26 minutes that leaves us with a buffer time of 4 minutes.

The other factors that one should think of at the stage of planning the business is that the university should be aware of the venture that you are getting in to as this would increase the chances of more orders and this would keep proper rotation in business This can also be the last resort for university colleagues as there wouldnt be many places available in near proximity if one feels hungry Both the roomies should be technically literate in case of a technical glitch and there should be multiple suppliers to keep a tap on market rates as a back up

Production efficiency is required as basic cookies wont require much mixing The other cookies will have ingredients such walnuts, coconuts and raisins that will require more time than normal cookies Hence the normal cookies will comparatively take less time than flavored cookies This would result in product efficiency as well as quality as repeated production would increase the chances of innovation

26 minutes have to be subtracted from the 240 minutes, because that is the time which we need for the first order and the next orders won't take the same amount of time because I can already start to mix another type of dough while my roommate is doing his part of the process, as you can see on the Gantt chart. The cycle time is therefore: put into oven (1 minute) + baking (9 minutes) = 10 minutes. This means every ten minutes will be a tray of cookies be baked. Therefore we have to divide the total time by the cycle time. (Maximum time time of first order ) / cycle time + 1 order(first tray) (240 minutes - 26 minutes ) / 10 minutes + 1 order = 22,4 orders That means in 4 hours we can finish to bake 22 dozen cookies each night.
