Alimentele fortifiate se obin prin suplimentarea cu compui biologic activi a unor produse srace sau lipsite n astfel de substane nutritive. Scopul operaiei este asigurarea unei protecii maxime a organismului i necesit o asociere nutriional sinergic i fiziologic adaptat. Realizarea produselor fortifiate trebuie s aib n vedere urmtoarele aspecte:

oportunitatea operaiei din punct de vedere tiinific alegerea celor mai potrivite alimente (alimente vectoare) care trebuie suplimentate pentru ca eficiena operaiei s fie maxim folosirea unor surse eficiente i stabile de compui biologic activi fortifierea s nu influeneze mult preul produselor fortifierea s nu determine modificri ale caracteristicilor senzoriale

Substanele nutritive cu care se realizeaz fortifierea sunt proteinele, aminoacizii, vitaminele, srurile minerale. Alimentele vectoare de fortifiere trebuie s se refere la produsele consumate de ntreaga colectivitate, s fie stabile i s nu se piard prin aplicarea anumitor practici culinare. Fortifierea trbuie realizat n mod juicios, deoarece adaosuri excesive de nutrieni pot crea la anumite persoane tulburri majore:

un nivel prea mare de fier n pine sau fin poate mri incidena cazurilor de hemocromatoz, a afeciunilor hepatice, inclusiv ciroz absorbia masiv de proteine poate determina o balan negativ a calciului hipervitaminoza A determin pigmentarea anormal a pielii, fragilitatea scheletului hipervitaminoza D conduce la hipercalcemie, anorexie i ntrziere mintal n cazuri extreme vitaminele C, E i b-carotenul sunt ageni redox a cror aciune, n funcie de concentraie, se poate inversa
