Food and Beverage Internship
12-Month Training Program Outline

Background:

The Country Club has developed a training program for participants who are interested in
developing skills and knowledge in the food and beverage departments of hospitality
operations. The program provides participants ongoing theoretical training while at the
same time receiving practical training in the food and beverage departments.

Interns are expected to participate in all required activities and meetings, and to complete
assigned training projects. If an intern fails to participate in the required activities, their
visa will be terminated and he or she will need to return home at their own expense.
Interns will receive payment for their practical training period. The participant will
receive a base pay of $8.25 per hour and can expect to be scheduled for 32 to 40 hours
per week.

Training Objectives:

• Develop and demonstrate knowledge through a series of training activities and


structured conversations with managers providing necessary theoretical knowledge in
guest service and business management as it relates to the hospitality industry.
• Demonstrate mastery and understanding of theoretical knowledge gained through
training activities, on-site guidance and training from direct supervisors through
increased responsibilities and positive supervisor evaluations.
Some of the participants will have opportunities to receive additional training over and
above that outlined in this plan for supervisory skills. They may also receive supervisory
practical training assignments. These assignments will be made based on proven ability,
a positive attitude, performance, and availability of the training opportunity.

Training Program:

Overview

The main objectives that the intern is to achieve are to fully understand the day-to-day
operations of the various departments within a hospitality setting and to learn the
methods and procedures by which the departments and divisions are managed. The intern
should obtain an overview of the private club organization and have an insight in how
departments relate to each other. The skills developed in the private club setting are fully
transferable to fine hotel operations where every guest is a VIP. In addition, the intern
should learn new skills and technologies, by exposing them to American standards of
service and management styles that differ significantly from those in their home country.
Finally, through daily interaction at the training site and in the local community, the
intern will gain a better understanding of American culture and society. The intern’s
education and training will expose American staff to new knowledge of foreign culture
and skills. Also, the training program will create an environment that promotes the open
exchange of ideas between the intern and the American staff.

Naturally, when an intern is training in one department, he or she will have exposure and
gain experience in all other departments that make up that division. In the hospitality
industry, by its nature, the divisions are heavily interconnected and no individual
department can operate completely in isolation.

At the end of the 12-month training program, the intern will have gained significant
knowledge and skills in the following areas:

a. Business Organization and Operations (knowledge of the club’s organization and


operations and their application to the hospitality industry),
b. Systems (knowledge of the club’s operating systems, including Point-of-Sale, payroll
and scheduling, and billing),
c. Teamwork (ability to function as part of a team; ability to get along with other
employees and to willingly pitch in when needed),
d. Technical Knowledge (understanding of each food and beverage operation, including
fine, casual and seasonal dining; banquet sales and service; kitchen; purchasing),
e. Customer Service (understanding the relationship between providing consistently
excellent customer service and the success of the business; ability to anticipate
customer needs and to take action to deliver customer satisfaction),
f. Communication Skills (ability to use appropriate language and to effectively convey
meaning, both verbally and in writing,
g. Productivity (ability to complete training assignments with a high level of quality in
the appropriate time frame), and
h. Professionalism (ability to maintain a mature and dignified demeanor).

Training/Internship Program Details:

Part I

For J-1 Visa candidates, the company offers a 90-day training/probationary program (unpaid).
During this time, the candidate will learn how our industry works and will be appointed a mentor at
the company. This is a unique experience that J-1 candidates actually get to work directly with
some of the most successful consultants in our industry. During this 90-day period, the candidate
will be required to obtain an insurance license with the State of California (6-day course, followed
by an exam).

Part II

Once the candidate completes the 90-day training period and pass the exam, the intern can elect
to participate in Broker Trainee Program (15-month training course).

Interns in our Broker Trainee Program will work along side of our most successful consultants
and brokers, and will experience a full-time career as an insurance broker. There will be an
opportunities to work directly with the clients and participate in consulting work.

The trainee will be eligible to receive $1,000/month stipend or commission, whichever is greater.
In an industry where the average age of an insurance broker is 58 in the state of California, the
average age of our company is 27. Some of our brokers make over $100,000 a year, and they
are under the age of 30 years old.

This is a phenomenal learning experience for the right candidate. Once the 18-month J-1 Visa
Program is completed, the intern may elect to apply for an H1-B visa and be considered for a
permanent position with the company. We currently have two H1-B Visa workers working full-
time.

Applicant Qualifications:
• To apply for an internship program, you must be a current hospitality or business
management undergraduate/graduate student OR a recent graduate who graduated less
than 12 months of the program start date (maximum duration – 12 months).
• To apply for a trainee program, you must hold a hospitality or business management
degree and at least 1 year of work experience, OR be a career professional of 5 or more
years of hospitality or business management experience (maximum duration – 12 months
for hospitality management).
• Excellent English skills
• Willing to advance current skills and knowledge by learning American hospitality

Restaurant Management Training/Internship Program Details:
As part of the McDonald’s family we are pleased to offer a globally recognized training &
development program. The training program offers text and classroom training as well as the
“shoulder-to-shoulder” training in the restaurants that exposes the candidate to all areas of
running a restaurant and ultimately being qualified to qualify as a Restaurant Manager in
McDonalds by completing all the required classes. The Management Trainee Program will focus
specifically on qualifying candidates to become shift managers in the restaurant.

Listed below is an outline of job responsibilities and timeframes for the various parts of the
management development. The first 3 months will consist of completion of the Management
Development Book and on-the-job training of applications learned in the modules. The last 9
months will consist of the candidate performing the job responsibilities learned in the
Management Development Book. Candidate is an hourly manager 45 hour work week. (Work
week will be defined as working 45 hours on varying shifts (breakfast, mid, close and may include
overnight). A shift will be approximately up to 9 hours.

Weeks 1-4 Orientation/Serve Safe/Basic People Skills


1. Completion of On-Line Serve Safe Training
2. Serve Safe Testing
3. Learn all crew positions in the restaurant and becoming certified in each position.
4. Basic People Skills Module –will help you develop essential people skills. Lesson 1
includes: building trust and earning respect from the people you manage and
communicating effectively as a manager with your crew. Lesson 2 will help you
understand how to provide appreciative and constructive feedback to your crew and
provide people skills that will help you serve as a role model for your crew.

Weeks 5-7 – Area Management – Production and Drive Thru


This module will develop your skills so you will be able to:
1. Manage each area in the restaurant to consistently provide Quality, Service, Cleanliness
& Value by managing people, equipment, and product and using the pre-shift planning,
implementation, and post shift analysis.
2. Balance customer care with controlling costs to provide profit
3. Identify, prioritize and solve problems within an area
4. Manage a safe and secure area
5. Complete items on the Food Safety Daily Checklist
6. Perform equipment checks and calibrate equipment
7. Manage deliveries without supervision
8. Apply basic management skills to make sure the grill team delivers hot, high quality food
within service times, checks to ensure that equipment is working properly and keeps the
grill area clean and sanitary.
9. Apply basic management skills to make sure the Front Counter and Drive-Thru teams:
Serve customers enthusiastically within standard service times and deliver orders
accurately.

Weeks 8 -12 – Shift Management


This module will develop your skills so you will be able to:
1. Complete pre-shift planning, plan implementation, and post shift analysis
2. Describe the elements you can control to promote restaurant profitability
3. Control costs without sacrificing customer and employee satisfaction
4. Ensure food safety throughout a shift
5. Demonstrate how to use tools to manage food safety
6. Describe the safety and security procedures to prevent accidents or theft
7. Open, run, and close a safe and secure shift
8. Describe steps used in reporting special situations related to customers, employees,
physical plan, and natural disasters.

Weeks 13-End of Year – Shift Management

After the completion of the training modules, the candidate will be qualified and verified as a Shift
