RESUMO
In some poultry industry, diets remain stored for days in the farm and, many
times, it is subjected to inappropriate storage conditions. The information related to the
environmental conditions, especially temperature and environment relative humidity,
storage time and, mainly, food water activity (aw) are important agents that influence
fungal growth and mycotoxins production on the substratum, becoming important to the
establishment of a program to prevent and control this agent (ORRIS, 1999).This
researchwork had as it principal objective to analyze the water activity to verify the
potential of fungal growth and the way that the product is stored. In this way, it was
studied the water activity of commercial diet in a company of the poultry integration in
the state of Rio Grande do Sul, Brazil, before the delivery at the farm and the last day of
storage, in different seasons. For this reason, this assignment sought to verify the
conditions of food preserving and possible risks of contaminations, serving as
preservation of fungi and toxins of avian importance and with reflexes in public health,
evaluating the potential of microorganisms growth on it, with the possibility of
supplying a toll to monitor the stored diet, inserted in a wide program, with criteria of
prevention and control. It was determined the humidity and the adsorption isotherm of
this feed to assist in the compreension about the way this feed is stored. For the results it
was confirmed the increase on water activity after the period of feed storage,
corresponding at 0,681 aw before the delivery at the farm and 0,693 aw the last day of
storage at the farm. However, the values of water activity were not inserted on the
minimum limits of fungal growth (0,780 aw) and aflatoxins production (0,86 aw). There
was a positive linear correlation between the water activity and the humidity of the diet,
both at the fact view and at the farm. The adsorption isotherm presented an increase in
humidity, with the increase in water activity. There wasnt correlation between the
water activity and ppb of aflatoxin meet in diets.

1 INTRODUO
2.2 Micotoxinas
O mtodo de coleta das amostras foi o proposto por Fonseca (1991), de acordo
com a frmula N=8n, para dietas granel, sendo:
N=nmero de pontos de onde devem ser retirados 400g da dieta;
n=nmero de toneladas do alimento.
Durante o carregamento dos caminhes foi tomada amostra de 400g. Essa
quantidade foi homogeinezada, sendo dela coletada amostra de 200g.
No ltimo dia de estocagem do alimento nas granjas, foram retiradas amostras
de dieta de todos os comedouros, de forma a totalizar 4 Kg. Dessa quantidade aps
homogeneizao, foi coletada uma amostra de 200g.
Foi realizada a anlise de atividade de gua, em cada uma das amostras das
dietas, em duplicatas, utilizando o aparelho Novasina Thermoconstant TH200. O
aparelho dispe de lmina higroscpica de cloreto de ltio, que tem de alterar sua
resistncia eltrica ou condutncia, fornecendo a umidade relativa (aw), conforme
Mossel et al. (1955). A acurcia do instrumento depende da calibrao com solues de
sais saturados, para estabelecer curva de calibrao padro (LEINSTNER e RODEL.,
1975). As amostras de camas dos avirios tambm foram coletadas e foi verificada a
atividade de gua.

Com os resultados obtidos pode ser verificado que houve ganho de umidade por
adsorso em todos os casos, com a formao de curva sigmide, correspondendo ao
grupo dos alimentos do tipo II.
No dessecador com sal que apresentava umidade relativa de 97%, houve
dificuldade para as amostras atingirem o equilbrio com o ambiente, sem que sofresse
deteriorao (contaminao fngica) no processo. Por esta razo, abandonou-se esta
umidade. As dietas contaminadas apresentaram 47% de umidade e atividade de gua de
0,94.
A Figura 12 mostra os valores obtidos de atividade de gua em dessecadores de
diferentes valores de umidade relativa (atividade de gua). Os resultados obtidos pelos
valores de atividade de gua e umidade (Figura 11) das dietas apresentaram um grfico
com o mesmo comportamento linear.
