Resumo
Neste trabalho foi feito análises qualitativas da polpa e semente do noni, com o objetivo de iniciar estudos que
possam comprovar a eficácia para a saúde humana e de certa forma tentar aplicar os resultados obtidos para
contribuir cientificamente nos ramos de nutrição alimentícia. Foram realizados alguns testes com os frutos do
noni (Morinda Citrifolia L.) que foram colhidos de forma natural da planta na cidade de Natal, Rio Grande do
Norte. As polpas foram extraídas no laboratório de forma manual com material devidamente limpo e a polpa
de estudo era retirada diariamente para evitar interferência no meio devido as propriedades oxidativas do
fruto. Os frutos foram incialmente colhidos e limpos apropriadamente, separado as sementes do fruto e dessa
forma foi possível obter resultados dentro da base de pesquisa que podem nos ajudar no processo científico,
obtendo rotas saudáveis para a sociedade vindoura. na primeira leva de frutos, foram colhidos com diferentes
graus de maturação, na segunda leva de frutos foi retirado somente os maduros que, por conseguinte foi
extraído as sementes para análise. O experimento iniciou a partir da extração do noni e separação somente da
polpa para identificar a quantidade presente de vitamina C na amostra do fruto, em seguida usamos a estufa
para retirar a umidade das sementes para analisar o grau de umidade, depois disto usamos o pó da semente e a
polpa pura para analisar pelo espectro de infravermelho. Foi optado por realizar a diluição da polpa em água
para apresentar um nível adequado de diluição da polpa e obtenção do melhor resultado das análises, entendo
que tal processo acabou sendo mais eficiente para obtenção do resultado positivo para o teste de vitamina C,
além de ter sido entendido que fatores como temperatura e tempo foram fatores que podiam contribuir
negativamente no resultado esperado neste trabalho. O resultado da vitamina C obtido no experimento foi
132,03 mg/100g de suco, umidade experimental da polpa 82,25%, da casca 80,06% e da semente 62,69%. O
infravermelho comprovou a presença de estiramentos de C=O em 1760 cm-1, C=C em 1660 cm-1, O-H em
3200 cm-1 devido a presença de estiramento axial, C-O em 1000 cm-1 e as demais absorções em 2900 cm-1
característico do estiramento axial da ligação de C-H do grupo metila.
