2. Mix1teaspoonscitricacidinto1cupwaterandstiruntilthecitricacidis

3. Pour1gallonofmilkintothepotandstirvigorouslywiththeslottedspoon,
whileheatingthemilk.Ifusingrawmilk,heatitto88F.Ifusing
pasteurizedmilk,heatitto90F.

4. Takethepotofftheburner.Addtherennetandslowlystiritinwithanup
anddownmotionoftheslottedspoonforapproximately30seconds.
5. Coverthepotandletitsitundisturbedfor5minutes.Ifyoureusingraw
