INSTRUCTIONS:
1. Ifusingarennettablet,dissolverennettabletincupwater.Wrapthe
restofthetabletinplasticandstoreitinthefreezer.Ifusingliquidrennet,
dilutetherennetincupofwater.

2. Mix1teaspoonscitricacidinto1cupwaterandstiruntilthecitricacidis
dissolved.Pourthisintothebigpot.

3. Pour1gallonofmilkintothepotandstirvigorouslywiththeslottedspoon,
whileheatingthemilk.Ifusingrawmilk,heatitto88F.Ifusing
pasteurizedmilk,heatitto90F.

4. Takethepotofftheburner.Addtherennetandslowlystiritinwithanup
anddownmotionoftheslottedspoonforapproximately30seconds.

5. Coverthepotandletitsitundisturbedfor5minutes.Ifyoureusingraw
milk,letitsitfor10minutes.Checkthecurdatthispoint.Itshouldlooklike
custard,withaclearseparationbetweenthecurd(solid)andthewhey
(liquid).Ifthecurdistoosoftorthewheyistoomilky,letitsitforafewmore
minutes.

6. Cutthecurdwithaknifethatreachestothebottomofthepot.Clickherefor
instructionsonhowtocutthecurd.

7. Putthepotbackonthestoveandslowlyheatitupwhilestirringthecurds
aroundwiththeslottedspoon.Ifusingrawmilk,heatitto90F.Ifusing
pasteurizedmilk,andyouregoingtousethemicrowavetostretchthe
curds,heatitto105F.Ifusingpasteurizedmilk,andyouregoingtousethe
stovetoptostretchthecurds,heatitto110F.)

8. Takethepotofftheburnerandstirslowlyfor2to5minutes.Morestirring
