RESUMO
ABSTRACT
Yellow passion fruit juice (Passiflora edulis) is marketed worldwide and cultivated in large scale
in Brazil. It is usually commercialized as juice and is a desirable ingredient in the beverage and
food industry due to its exotic flavor. The clarified passion fruit juice is largely used in industrial
products such as candies, jellies, syrups and soft drinks. Conventional clarification techniques
are usually discontinued, involving high time and energy consumption. Besides, some process
as pasteurization and evaporation induces in loss of sensorial quality, as some flavor and color
constituents of passion fruit are thermosensitive. Membrane technology is an alternative for
clarification and sterilization of fruit juices, once it doesn´t involve addition of heat. The scope of
this work was to verify the feasibility of the microfiltration process for clarification of passion fruit
juice, evaluating the obtained permeate flux and reductions in some parameters like viscosity,
color and turbidity. Besides, a mathematical model was applied to analyze fouling occurrences.
Cross-flow filtrations were carried out using hollow-fiber polyetherimide membranes, with 0.056

m of filtration area and porosity of 0.4 µm at transmembrane pressures of 1, 2 and 3 bar. The
filtration curves followed the flux decline behavior for polarization of concentration, with

stabilized fluxes of 5.89, 4.07, and 2.04 L.h m at 1, 2 and 3 bar, respectively. According to the
applied mathematic model, the major mechanism of fouling was the gel layer formation. The
membrane filtration process shows to be a reliable alternative for passion fruit juice clarification,
since the obtained clarified was with low turbidity.
