Hi! You can de nitely use green onions OR onion powder! I

look having the texture in there so I would go with a minced
green onion but the onion powder would be good to. I hope

I’ve never actually made these ahead of time and frozen them
but I’m sure you could make them, roll them into balls, freeze
on a cookie sheet and when hardened, transfer to a freezer
bag. I would add probably 20-25 minutes extra cook time
when popping in the oven when frozen. Let me know how it
works out!

 This recipe is great! I wanted to share that I made a double recipe

and baked them as directed. I froze them in a freezer bag after
 they cooled. Used them this week, they defrosted perfectly and
tasted great!
Also, I was short on ketchup so I subbed with marinara sauce. I

also used Italian bread crumbs because that’s what I had on
hand and omitted the thyme. Delicious!

differently….I added 2 eggs instead of 1 and I used regular
ground beef 80/20% fat. I thought it made the meatballs nice and

Made these for 50 people (quadrupled the recipe) and oh myyyy

they were gone in minutes!! Everyone is still talking about them 5
days later!!! I have a feeling I’ll be asked to bring these to all
future gatherings

These meatballs are terri c! I subbed out the breadcrumbs for
 crushed pork rinds and my husband couldn’t even tell (keto). I

used no sugar added Heinz Ketchup. It only made 15, but they
 were obviously larger. I will de nitely be making these again.

I’ve never tried using ground chicken but I’m guessing it will
be ne! I’ve made these using beef and turkey. You may need
the cook time to be a little shorter, though. Let me know how

I tried these for dinner last night and they were wonderful!! I did
add 1 tsp of Worschestire sauce and they were sooo good. I
placed them on a bed of Garlic, Butter and Parmesan noodles.

These are always a huge hit!! The talk of my work potluck. And

Hi Britt! I nd that if I don’t spray the pan enough, sometimes

they stick. Also, if I don’t cut the onion up pretty ne,
sometimes they fall apart a bit. But overall, we love this
recipe! I love that the meatballs are tender and juicy. I’m

Yes! Place them on a parchment lined cookie sheet, not

touching each other, and place them in the freezer. Let them
freeze enough that you can pull them off the sheet pan and
place inside a large plastic ziploc bag and they won’t stick
together. Good luck!

Can you make these ahead of time and just heat them up. I would
like to make them for my book club but don’t want to have to do
a lot of cooking while they are here.

I tried your recipe for the meatballs and it was a big hit! I think
that bit of ketchup gave it just the right amount of sweetness.
Froze half of them and used them the 2nd time on meatball subs!
