RESUMO
ABSTRACT
Brazilian poultry industry has gained a prominent position in the international market,
becoming the largest exporter of chicken meat in the world, where product quality has
become fundamental for commercialization, since the new consumer market has been
concerned with the quality of the products it consumes, mainly due to the occurrence
of food-borne diseases that affect the population, being characterized as an important
public health problem. In this productive chain, the slaughterhouse is presented as a
coordinator, responsible for the production of safe food. It is evident that a totally safe
food is virtually impossible to achieve, however, industry and regulatory agencies have
worked to obtain safe and quality food. The main routes of contamination involve the
man, especially the manipulators and direct workers of the raw material. In this way,
the importance of integrating quality control tools in the food chain is important in order
to guarantee a safe and marketable product. Taking all this into consideration the
present work aims to address the main quality control tools applied to the chicken
refrigeration industry.

É uma norma genérica que pode ser utilizada por todas as organizações do
setor alimentício, auxiliando-as a identificarem e controlarem riscos alimentares. Seu
surgimento se deu pela intenção da consolidação da responsabilidade das empresas
em aplicar as práticas mais seguras em toda a sua cadeia de produção, desde a
recepção de matérias primas até a distribuição, assegurando assim produtos de
qualidade e integridade (ABNT, 2006).
A família ISO 22000 conta com uma série de normas específicas para cada
