AGRADECIMENTOS
The present work aims to focus on the main non-caloric or low-calorie sweeteners,
which one in the future, will be a chapter of a book about food techniques designed to
provide subsidies, primarily, to students engaged in Nutrition courses in Brazil.
With the increasing access of information and awareness about the need to keep
healthy eating habits, people have tried reducing their intake of food containing some
ingredients which when consumed excessively are considered harmful to health, including
sugar. This new consumption demands from food industry some substitutes for sucrose
with reduced total caloric value in preparations. Several new sweeteners have been
developed and in recent decades have come to make up a growing range of food products.
Thus, in the list of approved sweeteners for consumption, sodium cyclamate associated
with saccharin, is the most popular sweetener because it is cheaper. Among the sweeteners
with acceptable daily intake already established, aspartame has the most permissive intake
limits. Sucralose is the sweetest of all, among those affordable in Brazil. Alitame,
thaumatin and neohespiridine are not approved by FDA. With this change in dietary
patterns, also emerged the need to produce scientific knowledge, both regarding the
possibilities of application, in the food technique, of the various known sweeteners -
keeping within view the ideal of reproducing the functionalities of sucrose - as well as to
check for adverse effects in order to establish safe quantitative intake limits.
