intermedirio da reao de "Maillard".
Esses aditivos no devem ser utilizados em alimentos fontes de vitamina B1
porque ela pode ser decomposta por eles. Os sais de clcio so utilizados neste caso.
Em alimentos que contm lipdeos e podem se oxidar como o caso de peixes
secos, convm evitar essa oxidao, com o uso de antioxidantes porque essa reao
dar o malonaldedo, que reage facilmente com o aminocido. Os peixes podem perder
at 12% de lisina aps processamento a temperaturas de 100C para secagem.
