 Pâte Sucrée

Pâte sucrée é uma massa doce utilizada na grande maioria das tortas preparadas em confeitaria.
Contém uma alta porcentagem de gordura (manteiga, de preferência), o que fornece uma textura
crocante. Em adição, acrescentam-se também ovos, açúcar e farinha de trigo.
 Composição Pâte Sucrée

● A pâte sucrée pertence à família das massas para torta conhecidas como massas
3-2-1, pois levam em sua composição, aproximadamente:
3 partes de farinha
2 partes de gordura
1 parte de líquido (açúcar e ovos).
Cuidados no preparo da massa Pâte Sucrée
● Deve ser preparada rapidamente para não permitir o derretimento da manteiga
● A manteiga deve está resfriada em dividida em blocos
● Pode ser adicionado farinhas e oleaginosas (avelãs, amendoim, amêndoas, etc.)
● Pode ser adicionado especiarias na massa

MERENGUES

Definição

O merengue é uma preparação

conhecida desde o séc. XVI que
pode ser definida como a mistura de
claras de ovo batidas juntamente
com açúcar formando uma mistura
aerada e estável.
MERENGUES
O merengue é um ingrediente
básico em confeitaria e é
comumente utilizado como
cobertura de bolos e como
ingrediente de diversas sobremesas
como soufflés, mousses, tiramisù,
etc. Pode ser assado caracterizando
outros tipos de sobremesa, como
por exemplo, pavlova e vacherin,
ou ainda fornecer “camadas” para
bolos. O merengue pode sofrer a
adição de farinha de amêndoas e
corantes ou cacau caracterizando
os famosos macarrons –
requintado petit four.
CARACTERÍSTICAS DA CLARA DE OVO

A clara (também conhecida como albúmen) é composta basicamente por

água (quase 90%). O restante é composto por proteínas, minerais,
vitaminas e glucose. Entre todas as proteínas existentes na clara, algumas
apresentam uma importância essencial na ciência da culinária:

Ovomucina (3,5%): é a proteína que indica a qualidade do ovo em termos

de “envelhecimento”. A ovomucina forma uma estrutura organizada que
estabiliza a clara, possivelmente uma forma de proteção da gema. Quanto
mais velho é o ovo, a clara se encontra mais líquida devido a uma
desintegração dessa estrutura.

● Ovoalbumina (54%): Essa proteína assim que é aquecida torna-se

branca e coagula – processo que ocorre a 80oC.

● Ovotransferrina (13%): Da mesma forma que a ovoalbumina

também sofre coagulação quando exposta ao calor, porém esse
processo se dá aos 60oC.
● CURIOSIDADE:
 PREPARO DO MERENGUE

● Ao batermos as claras as moléculas de proteína

se ligam e formam uma frágil rede que aprisiona
o ar.
● Essa rede de não é suficiente para estabilizar
essa espuma por muito tempo, e após alguns
minutos a rede colapsa.
● Ao assarmos o merengue, as proteínas se
coagulam com a temperatura aprisionando o ar.
● a adição de algum ácido como o suco de limão,
o ácido tartárico ou o cremor de tártaro diminui
o pH da albumina, o que a torna levemente mais
estável, evitando que o merengue colapse
rapidamente.
TIPOS DE MERENGUES

Proporção básica
A proporção básica dos merengues é geralmente 1 parte de claras para 2 partes de
açúcar.

Segue abaixo os tipos de merengue mais conhecidos.

Crème Pâtissière

Definição

Esse creme é um dos mais versáteis

na confeitaria, podendo, com a
adição de poucos ingredientes
tornar-se recheio de uma série de
preparações, como bolos, tortas,
éclairs, danish pastries (preparações
doces com massa folhada), servir de
base para soufflés, etc.
Crème Pâtissière

● O creme confeiteiro é um creme cozido (um custard) à base de leite, açúcar,

manteiga, ovos e amido (esses dois últimos são ingredientes com alto poder
espessante).
● Ao prepararmos o creme confeiteiro devemos, sempre, temperar as gemas/ovos,
adicionando um pouco da mistura quente aos ovos+amido, equilibrando a
temperatura das duas misturas, o que evita a formação de grumos (coagulação
excessiva dos ovos).
● Após a cocção do creme, devemos transferi-lo rapidamente para um recipiente
seco, cobri-lo imediatamente com filme plástico para evitarmos a formação de
película e resfria-lo.
Curd

Definição

Curds são cremes levados ao fogo e

cozidos lentamente (de preferência
em banho-maria) que levam ovos,
açúcar, manteiga e suco de fruta
ácida – comumente suco de limão.
CURD

● A combinação do calor, da agitação e

do ácido sobre os ovos faz com que a
sua proteína se coagule transformando
essa mistura em um creme.
Chantilly

Definição

O nome desse creme vem do château

de Chantilly, nos arredores de Paris,
onde o famoso chef Vatel trabalhou
durante o séc. XIX.
 FORMAÇÃO DO CHANTILLY

● Ao batermos o creme de leite fresco a gordura presente recobre as bolhas de ar, formando
“bolhas de ar estáveis”, levando à obtenção de um creme leve e aerado.
● Isso só é possível com a utilização de um creme de leite com alta porcentagem de gordura
(pelo menos 30%) e que esteja em temperatura baixa (ao redor de 4oC).
● A temperatura baixa previne que a gordura do creme fique por demais fluida, o que
prejudicaria a incorporação de ar.
● Ao prepararmos o creme Chantilly devemos gelar o recipiente e o batedor, a fim de
obtermos um creme uniforme e com rapidez.
● Jamais bata o creme de leite fresco em excesso, para evitarmos que a gordura se separe.
● Para que o creme de leite batido receba o nome de creme Chantilly, deve- se acrescentar
açúcar e extrato de baunilha
