Origem
O raviolli é um prato típico da gastronomia italiana. Assim como
outras pastas, o raviolli se espalhou pelo mundo e hoje possui
diversas receitas e variações, de acordo com a região ou país
onde é produzida.
Os raviollis se apresentam como quadrados de massa recheados,
ou pequenos pasteis, que se cozinha por alguns minutos em
água fervente ou no vapor. A massa é, em geral, composta de
farinha de trigo, ovos e um pouco de água.
O recheio dos raviollis pode ser composto de toda e qualquer
coisa, salgados ou doces. Pode-se usar verduras (espinafre, por
exemplo), queijos (geralmente ricota), carnes (normalmente
restos de carne cozida, moídos), camarões, lagostas, pesto,
abóbora, carne seca, etc.
HISTÓRIA
APESAR DE SER UM CONHECIDO COMO UM PRATO DA
GASTRONOMIA ITALIANA, ASSIM COMO OUTRAS MASSAS O
RAVIOLLI TEM ORIGEM ORIENTAL. HÁ HISTÓRIAS
CONTRADITÓRIAS, POR ISSO NENHUMA PODE SER TOMADA
COMO VERDADE ABSOLUTA. A MAIS COMUM SUGERE QUE SUA
ORIGEM É PERSA, E NÃO CHINESA COMO MUITOS PENSAM. A
ARTE DE RECHEAR FOLHAS DE MASSA JÁ EXISTIA NA
MESOPOTÂMIA. AS MAIS ANTIGAS RECEITAS CONSTAM DA
LITERATURA CULINÁRIA ÁRABE DO SÉCULO 10.
NA ITÁLIA, NASCERAM NA ILHA DA SICÍLIA, BERÇO DE TANTAS
OUTRAS DELÍCIAS DA CULINÁRIA ITALIANA. A PALAVRA RAVIOLO
É O SINGULAR DE RAVIOLI, E VEM DO LATIM GRAVIOLO, QUE
SIGNIFICA CHEIO, PESADO. COMO NOS DIALETOS FALADOS NA
ILHA É COSTUME COMER OS “G” ANTES DOS “R” , GRAVIOLO SE
TORNOU RAVIOLO.
OS PRIMEIROS RECHEIOS ERAM COMPOSTOS DE OVOS, QUEIJO,
RICOTA E ERVAS. AO NORTE DA ITÁLIA, ENTRARAM NOS
RECHEIOS CARNES EM GERAL. DE ACORDO COM A TRADIÇÃO, OS
RAVIOLLI DEVERIAM TER FORMATOS QUADRADOS OU
RETANGULARES. CONTUDO, HOJE SÃO PRODUZIDOS EM
DIFERENTES DESENHOS, PESOS E DIMENSÕES.
Acredita-se que o raviolli tenha chegado ao Brasil com os
primeiros imigrantes italianos, no final do século 19. Por aqui, se
tornou uma iguaria apreciada que ganhou o gosto de todos,
transformando esse prato relativamente simples em uma receita
realmente gastronômica.

Preparation mode
Make the filling first.

When boiling, add 2 tablespoons of oil.
Leave on very low heat while you prepare the ravioli.

Place the ingredients in the processor.
If you don't have a processor, you can do it by hand. Just add all
the ingredients and knead.
Pass the dough in the cylinder until it is very thin. Put a ball of
stuffing and close, cutting with the reel.
You don't even have to stick with anything. If you don't have a
rolling pin, you can roll out the dough to a very thin thickness.
Put a little stuffing on each piece, cover with the dough and cut
the squares with the reel. You don't need to use a fork, egg
whites or anything else for the dough to stick, as the reel closes
the ravioli well.
Place the finished ravioli in a flour-dusted form.

Cook the ravioli in portions for 10 minutes. Drain and place on a
platter.
Pour the bolognese sauce on top, grated cheese, and you're

Ravioli is a typical dish of Italian cuisine. Like other pastes, raviolli

produced.

steamed. The dough is usually made up of wheat flour, eggs and

Modo de preparación
Hacer el relleno primero.
Poner un poco de aceite en una sartén y sofreír el ajo y la
cebolla. Pon la carne.
Cuando esté casi lista, ponemos el tomate, un poco de sal y por
último el olor verde al gusto.
Si lo desea, puede agregar un poco de salsa Worcestershire. La
sazón depende de ti. Dejar enfriar.
Poner una olla con 3 a 4 litros de agua a hervir.
Sazone esta agua con tallos de perejil, dientes de ajo y 1 cubo de
caldo de pollo.
Si te gusta la albahaca, puedes agregar algunas hojas para darle
sabor a este caldo.
Cuando hierva, agregue 2 cucharadas de aceite.
Deja a fuego muy bajo mientras preparas los ravioles.

Pasar la masa en el cilindro hasta que quede muy fina. Poner una
bola de relleno y cerrar cortando con el carrete.
Ni siquiera tienes que quedarte con nada. Si no tienes un rodillo,
puedes estirar la masa hasta que tenga un grosor muy delgado.
Poner un poco de relleno en cada pieza, cubrir con la masa y
cortar los cuadrados con el carrete. No hace falta usar tenedor,
claras de huevo ni nada para que la masa se pegue, ya que el
carrete cierra bien los raviolis.
Coloque los ravioles terminados en una forma espolvoreada con
harina.
Cuando termines, el agua estará hirviendo.
Cuece los raviolis en porciones durante 10 minutos. Escurrir y
colocar en un plato.
Vierte la salsa boloñesa por encima, el queso rallado y ¡listo!

DELICIAS DE LA COCINA ITALIANA. LA PALABRA RAVIOLO ES EL
SINGULAR DE RAVIOLI, Y PROVIENE DEL LATÍN GRAVIOLO, QUE
SIGNIFICA LLENO, PESADO. COMO EN
