ESTILO DE CERVEJA
Toda a cerveja pode ser dividida em duas categorias: ales e lagers.
Existem numerosas subcategorias de estilos diferentes que se enquadram nas duas categorias.
ALE é a cerveja de alta fermentação fabricada em temperatura mais
quente. A maioria das Ales é encorpada, rica em sabor, com nuances
de frutas ou especiarias e um sabor final agradavelmente lupulado.
Geralmente robustas e complexas, com uma variedade de aromas de frutas
e malte, as Ales vêm em muitas variedades. Elas podem incluir Bitters,
Milds, Abbey Ales, Pale Ales, Nut Browns, etc. As Ales são geralmente
mais escuras do que as lagers, variando entre os tons de ouro forte e
âmbar avermelhado. A fermentação na parte superior do líquido e maior
quantidade de lúpulo no mosto dão a essas cervejas uma frutificação, uma
acidez e um tempero agradavelmente amargo e único. As Ales têm uma
personalidade individual mais assertiva do que a cerveja Lager, embora seu
teor alcoólico seja o mesmo.
LAGER é fermentada na parte inferior e fabricada a baixas temperaturas.
Geralmente, as Lagers são fáceis de beber, pouco encorpadase com sabor
suave, limpo e final fresco. A Lager é originária da palavra alemã “lagern”,
que significa “armazenar”. Isso se refere ao método de armazenamento
por vários meses em temperaturas próximas ao congelamento. Pura e
refrescante, com um acabamento suave e com um envelhecimento mais
longo, as Lagers são as mais populares do mundo.
PILSEN é um tipo de cerveja suave com uma personalidade de lúpulo
mais proeminente. Ela leva o nome da cidade de Plzen, na República
Checa e apresenta o estilo alemão de cerveja de trigo. Nove entre dez
cervejas consumidas hoje são baseadas na forma pilsen, original de 1848.
CERVEJA DE TRIGO é um estilo de cerveja alemã de trigo “hefe”
é um fermento que adiciona um sabor único de banana , macã , cravo ,
e outras especiarias. Existem 3 tipos dessa weissebier: Hefeweizen (pale
sem filtrar o fermento), dunkelweizen (dark, sem filtrar o fermento) and
kristallklar (pale,filtrada).
STOUT é a cerveja escura feita por fermentação alta, usando malte
torrado ou cevada. A torra escura confere à cerveja o seu sabor e cor únicos,
muitas vezes com um sabor tostado ou de café.
ABADIA tem sua origem nos mosteiros da Bélgica. As cervejas Abbey
são cervejas monásticas ou de estilo monástico produzidas com o antigo
método de fermentação alta. Essas cervejas são geralmente encorpadas e
têm um alto teor alcoólico (6-9% vol). A cor pode variar entre ouro forte e
âmbar a vermelho escuro e marrom escuro.
BRANCA (witbier ou simplesmente cerveja branca) é originária do
norte da Europa e remonta precisamente à tradição cervejeira flamenga,
belga e do norte da França. Ela recebe esse nome devido a leveduras
suspensas e proteínas de trigo que fazem com que a cerveja pareça turva
ou branca, quando gelada.
TRAPPIST ganho forma originalmente em mosteiros trapistas. Para
uma cerveja se qualificar com certificação Trappist, a cervejaria deve estar
em um mosteiro, os monges da cervejaria devem desempenhar um papel
na sua produção e as políticas e os lucros da venda devem ser usados para
apoiar a mosteiro ou programas sociais.
A cerveja AROMATIZADA ou cervejas especiais são produzidas pela
adição de ingredientes específicos à cerveja, como frutas, destilados ou
temperos.
CIDRA é primo em segundo grau na família da cerveja. A diferença
entre cerveja e cidra é que a cerveja obtém seu álcool de fermentados,
maltados enquanto a sidra obtém seu álcool do suco de maçã fermentado.
 BEER STYLES
All beer can be divided into two categories:
ales and lagers; which have numerous subcategories pertaining to different styles.
ALE is a top-fermented beer brewed at a warmer temperature. Most ales
are full-bodied, rich in taste, with nuances of fruit or spice and a pleasantly
hoppy finish. Generally robust and complex with a variety of fruit and malt
aromas, ales come in many varieties. They could include Bitters, Milds,
Abbey Ales, Pale Ales, Nut Browns, etc. Ales are often darker than lagers,
ranging from rich gold to reddish amber. Top fermenting, and more hops
in the wort give these beers a distinctive fruitfulness, acidity and a pleasant
bitter seasoning. Ales have a more assertive, individual personality than
lagers, though their alcoholic volume is the same.
LAGER is bottom-fermented and brewed at a lower temperature. Lagers
are typically meant for easy drinking, light in body and mild in taste, with
a clean flavor and crisp finish. Lager originates from the German word
“lagern” which means “to store”; it refers to the method of storing it for
several months in near-freezing temperatures. Crisp and refreshing with
a smooth finish given to the longer aging period, lagers are the world’s
most popular beer.
PILSNER is a type of pale lager with a more prominent hop character.
It takes its name from the city of Plzen, in the Czech Republic, and it’s
a German style of wheat beer. Nine out of ten beers consumed today are
based on the original pilsner form 1848.
HEFEWEIZEN is the German style of wheat beer. “Hefe” means
“yeast”, which adds a unique flavor of banana, apple or cloves with a
dry, tart edge and some spiciness. There are three different types of
weissbier: hefeweizen (pale with yeast), dunkelweizen (dark, with yeast)
and kristallklar (pale, with yeast removed by filtration).
STOUT is dark beer made out of top-fermentation, using roasted malt
or barley. The dark roast gives the beer its unique flavor and color, often
with a toasty or coffee-like taste.
BLANCHE (witbier or simply white beer), is native to northern Europe
and precisely refers to the Flemish, Belgian and northern French brewing
tradition. It gets its name due to suspended yeast and wheat proteins which
cause the beer to look hazy or white, when cold.
ABBEY has its origin in Belgium monasteries. Abbey beers are
monastic or monastic-style beers produced with the ancient method of
top fermentation. These beers are generally full-bodied and have a high
alcohol content (6-9 % vol). The color can range from deep gold and amber
to deep red and dark brown.
TRAPPIST was originaly brewed in Trappist monasteries. For a beer
to qualify for Trappist certification, the brewery must be in a monastery,
the monks must play a role in its production and the policies and the
profits from the sale must be used to support the monastery or social
programs outside.
FLAVORED BEERS or special beers are produced by adding
particular ingredients to the beer, like fruits, spirits or spices.
CIDER is a second cousin to the beer family. The difference between
beer and cider is that beer gets its alcohol from fermented, malted grain
while cider gets its alcohol from fermented apple juice.
